Saag Aloo – Cornish style

A great little simple recipe I made for lunch today. A slighty Cornish take on my favourite Indian dish – Saag Aloo.

This recipe will serve two as a side dish or one as a main.


400g of Cornish salad potatoes, quartered.
300g spinach, washed and rough chopped
2 leeks, chopped
2 chillis, chopped
2 inches of ginger, grated
4 cloves of garlic, finely chopped
1 tsp ground coriander
1 tsp ground cumin
1/2 tsp ground turmeric
1/4 tsp salt


Set potatoes to boil for 10 minutes

While they are on, prepare the other ingredients. Take a large non-stick saucepan, add a good glug of oil or butter and fry the leeks, chilli, garlic and ginger over a gentle heat for a couple of minutes.

Add the par-boiled potatoes and fry for 5 minutes. Then add the spices and fry for another 15 minutes, stirring frequently.

Finally, add the spinach, allow to wilt and stir into the gorgeous spicy mix.
